CREAMY CHICKEN STUFFED AVOCADOS

This has become one of my family’s favorite meals.  It is also one of my favorite to prepare, very simple and can be a 30min meal no problem.  It also smells delicious as it cooks.

Here is what you will need:

  • 1 lb Chicken Thighs
  • 4 to 5 Avocados
  • 1 can Coconut Milk
  • 1 Tbsp Cumin
  • 2 Tbsp Paprika
  • 2 tsp Sea Salt
  • 1 tsp Black Pepper
  • ½ cup Fresh Cilantro
  • 1/2 cup Fresh Parsley
  • 4 Small Limes Juiced
  • 4 Cloves Garlic

Here is how you do it

Saute chicken in a pan, I like to brown on each side with a little coconut oil and then add chicken broth to let simmer for 20mins.  Cut avocado’s in half and remove the pit.  Place avocados on a backing sheet.  As avocados bake at 350 for about 5 mins shred the cooked chicken and add all the spices (cumin, paprika, sea salt and pepper).  In a food processor, make your cream sauce – add cilantro, parsley, garlic, coconut milk and juiced limes.  Pull avocados from the oven and stuff with shredded chicken. Top the stuffed avocados with the cream sauce and serve.
